A true icon, this is the product that, thanks to its uniqueness and quality, has allowed Biava winery to become known even beyond national borders to the point of obtaining recognition by the Lombardy Region as ‘Ambasciatori del vino lombardo nel mondo’ (Ambassadors of Lombardy wine in the world).
Precious raisin wine obtained from the native grape variety of the same name, known as a rarity since 1300.
The grapes harvested at the beginning of October must pass a maniacal and rigorous selection process before being selected for the drying phase, which takes place without forcing, in a natural way, for about 45/60 days.
Maceration in contact with the skins lasts no less than 18 days and, once racked, the slow and difficult fermentation continues for about a month until an alcohol content of over 15% vol. is reached. The residual sugar content of about 80 g/l gives the typical mildly sweet sensation.
Everything about this wine is extraordinary, starting from the colour of a ruby hue that is definitely among the most intense on the wine scene. Inebriating on the nose, it is captivating, aromatic and powerful at the same time, with scents ranging from fruity (cherry, citrus, plum jam) to spicy (sage, rosemary, incense) with final balsamic notes. In the mouth it is full, fresh, powerful with a gentle sweet note, but perfectly balanced by a pleasant acidity that deprives the drink of any cloying sensation. An elegant almond note gives infinite length and persistence.
