‘Speck del Grappa Da Vittorio’ comes only from local Italian pigs from the best farms. The leg is deboned and trimmed by hand, then salted with sea salt and herbs through the ancient method of dry salting. Cold smoking is carried out trough natural methods with beech wood which gives the meat a delicate and inviting taste. The 12 month-aging allows to harmonize intense and unique aromas.
