The fermentation of the base wines takes place entirely in barrels; the re-fermentation in bottle with ageing lasts far longer than the minimum required by the specifications and reaches 60 months on the lees in the bottle. The bottles are turned and disgorged by hand.
More than a selection, what lies behind the decision of whether to produce Brut Grande Année is the ability to recognise the extraordinariness of a vintage and a grape with such foresight: since it is only produced in great vintages, these must translate into something unique. Vinification exclusively in small oak barrels averaging 20 years old, made and restored in the Maison’s own cooperage, a treasure trove of over 3,500 barrels. Remuage and dégorgement are carried out entirely by hand, after ageing on the lees in bottles with natural corks. Its rich texture, creamy effervescence and delicate bitterness make it the ideal accompaniment to refined dishes, with an aromatic profile that can enhance several types of cuisine. Persistence on the palate and a saline finish make La Grande Année a reference for champagne lovers all over the world.
