Torta delle Rose (i.e. Rose cake) has its roots in the Italian pastry tradition, particularly in the cuisine of Mantua. Its origin is linked to the Gonzaga court, where it is said that this soft and fragrant cake was created on the occasion of the wedding of Francesco II of Gonzaga and Isabella d’Este in the 15th century. The cake’s distinctive name, ‘Torta delle Rose’, derives from its characteristic shape: a set of soft swirls of leavened dough, arranged in a spiral to resemble a bouquet of blooming roses. This delicacy is made with a rich dough that, once risen and filled with buttercream and sugar, is rolled and cut into its iconic shape. The cake releases an irresistible fragrance and has a fragrant texture on the outside and a soft one inside.
