The cake Bark is an iconic dessert of European pastry, symbol of autumn and winter season. The story goes that the cake was born between the French and Italian regions of the Alps, inspired by nature and the textures of the bark of the trees in the mountains. The Bark cake is a reinterpretation of chocolate meringue, with crunchy meringue rolls, chocolate cream and a delicate chocolate chip finish, evoking the image of a pile of underwood bark.
The recipe evolved in the alpine areas between Italy and France during the seventeenth century, leading to chocolate being the main ingredient, enriched with notes of bitter cocoa, recalling the typical flavors of the autumn season with a modern touch.
This reinterpretation by the maître pâtissier Da Vittorio is a tribute to the pastry master, demonstrating how the great classics can be successfully revisited while maintaining their authentic soul.
