Corteccia

The Corteccia (i.e. bark) cake is an iconic dessert in European confectionery, a symbol of the autumn and winter season. This dessert traces its origins to the French and Italian regions of the Alps, inspired by nature and the textures of tree barks in the mountains. Corteccia cake is a reinterpretation of the chocolate meringue, with crunchy cylinders of meringue, chocolate custard and a delicate finish of chocolate chips, evoking the image of a pile of bark in the undergrowth.
The recipe evolved during the 17th century with chocolate as the main ingredient, enriched with hints of bitter cocoa, evoking the typical flavours of the autumn season with a modern twist.
This reinterpretation by Da Vittorio Pastry Chefs pays tribute to the art of pastry-making and shows how the great classics can be successfully revisited while retaining their authentic soul.
