The Mimosa cake is a traditional Italian dessert, first created to celebrate Women’s Day. Its origin dates back to the 1950s, when a pastry chef from Rieti created this soft, fragrant cake inspired by mimosa flowers, a symbol of femininity and springtime.
‘Torta Mimosa’ derives its name from the characteristic crumbled pieces of sponge cake that adorn the surface, reminiscent of the small yellow mimosa flowers. This cake comprises soft layers of sweet sponge cake, filled with a delicate diplomatic cream made of custard and whipped cream, which gives it a velvety texture and an enveloping flavour.
