Profiteroles are a dessert with roots in the French pastry tradition, but their history is also linked to Italian cuisine.
The word ‘profiterole’ comes from the French word ‘profit‘, meaning ‘gain’ or ‘benefit’. This is probably a reference to the small size of the cake and its ability to please the palate, akin to a small ‘gain’ of gastronomic satisfaction.
The origins of profiteroles can be traced back to the 17th century in France, during the reign of Louis XIV, when the renowned court confectioner, Marie-Antoine Carême, perfected the recipe for beignets (light puffs made with flour, butter, water, and eggs) and filled them with various custards and fillings.
